Vegetables medley

Yesterday was Zenxin’s member’s sale. All vegetables and fruits were on 20% off. I went a little bit overboard and bought more vegetables than I should.

What to do with the remaining vegetables? Combined it all in a pot.

This is what I call Vegetable Medley, a mixture of so many different types of vegetables in different colors. You couldn’t get anymore healthier than this.

Ingredients
3 potatoes, peeled and chopped
1 medium sized purple sweet potato, peeled and chopped
1 purple carrot, peeled and sliced
2 carrots, peeled and sliced
1 broccoli florets

Methods
1. Put potatoes, sweet potatoes, purple carrot and carrots into a saucepan, cover with boiling water (just slightly covering the vegetables) and cook until almost tender.
2. Add broccoli and continue boiling until all the vegetables are tender.
3. If too much water, drain some and purée all the vegetables.
4. Serve and store remaining portions into freezer cubes.
